The "one soup, three sides" is a concept in japanese home cooking, where the meal consists of a serving of rice, a soup, one major and two minor side dishes. The meal makes ample use of the dashi typical of Osaka, so you get to taste the local cuisine culture as well.

On the other hand, "gochisosama" is said at the end of the meal as a sign of gratitude for all the effort of those who made the meal possible, from farmers to cooks. Both are indispensable parts of Japanese customs.

It may take some getting used to, but your guide Ms. Machiko, who has taught Japanese table manners in many countries around the world, will carefully teach you all you need to know.
